Harvested at night and destemmed immediately, the grapes were subjected to cold fermentation in open-top fermenters for about a week. Kept on lees for around 12 to 14 days, the wine was finally blended, fined, filtered and bottled. The resulting Shiraz displays a vibrant crimson-purple colour, with aromas and flavours of black fruits and dark chocolate abundant in the wine. The full weighted palate is filled with eloquent tannins, which provide a powerful structure and smooth texture to this Shiraz. Suggested food matches for this flavoursome wine include grilled lamb, beef stew and Chili Colorado.
