From a plot of 6 hectares. of tempranillo or fine red, grafted with buds from our Picón, exceptional grapes are obtained, with a maximum yield per hectare of 4,000 kg, reaching a high concentration of aromas, color and noble tannins. After an exhaustive monitoring of this plot, it was decided to harvest and produce independently from the other wines in the winery. Yield: Less than 4000 kg / ha. Fermentation and maceration: In order to obtain the maximum aromatic intensity, pre-fermentation was carried out at low temperature (14 ºC) for six days. Subsequently, the alcoholic fermentation is controlled with native yeast, at 26 degrees and it is over-vatted for a total of 28 days. Malolactic: Slow and rested without bacteria addiction, at 22º for 20 days. Aging: 22 months in new French oak barrels of selected grain, passing through 4 different types of oak. Bottling: After aging, it is bottled without being cold, clarified, or filtered. It presents an intense cardinal purple color, with blue edges that show its youth. Closed layer typical of the Tinto Fino grape, dense and abundant tears. The aromas of flowers and fresh fruits fill our senses, later appearing the tones of vanilla, cocoa, roasted, new leather, which confirm the good blend of the wood with the grape. Sandalwood and spicy tones, as well as tobacco or liquorice leave a pleasant and persistent memory. The entry into the mouth is elegant, meaty, filling the palate with freshness. The advance is powerful and complex and leaves us with a long, intense aftertaste, of very ripe grapes and round, noble tannins. It is, in short, a serious and complex wine, which is presented now, but has a long life ahead of it.
