Hacienda Solano is the personal project of the Cubillo family. In 2001 the three siblings, Estrella, Nuria and Agustín decided to start making their own wines from the family vineyards which until then they had only worked in order to sell the grapes to the best wineries in the area. To do so, they have been joined from the beginning in technical management by the enologist Sophie Khün and since 2016 by Toni Sarrión from the Mustiguillo winery.

Hacienda Solano has vineyards in the La Aguilera area; old vineyards, some over a hundred years old, located at altitude and worked ecologically though as yet uncertified. Perfect conditions for preparing wines that reflect all the character of the terroir and the variety with freshness and with a great bouquet power.

Hacienda Solano Viñas Viejas is a wine made with Tinto Fino grapes from vineyards over 60 years old located in the area of ​​La Aguilera, on soils consisting of marl, clays and limestone.

They are harvested by hand and placed in 12 kg boxes, with the grapes being selected in the vineyards. Each plot is turned into wine separately. Before fermenting they undergo a cold maceration at 8-10°C for 24-36 hours. The alcoholic fermentation is in stainless steel tanks with temperature control for 11-13 days, with slight overpumps and gentle treadings. After the fermentation, the piles remain in contact with the wine, macerating for 5-8 days. The aging process lasts 14 months in French oak barrels and 4 more months in a tank.
