Dolores Hidalgo has been a wine-growing area since the 16th century, marked by the insurgent character of its people. There, the Cura Hidalgo taught the trade of viticulturist to the settlers who crystallized their efforts with each harvest. This was until the troops sent by Viceroy Francisco Javier Venegas destroyed the vineyards, awakening the revolutionary spirit of Cura Hidalgo and the inhabitants of Dolores and precipitating the movement that would later conclude with Independence and the birth of a new land. Many years later, Don Juan Manchón arrived in Dolores Hidalgo, propagated the vine and befriended Don Ignacio Vega with whom they began the journey of planting vineyards in the terroir. Don Juan's son became a winemaker and made a promise to himself to make wine if he returned to the place. The first hectare was planted in the mid-1990s. The selected variety was Cabernet Sauvignon, which 15 years later would be used to make one of the first wines for sale to the public.
