The grapes from different vineyards are vinified separately before the final blend. Carefully selected, they go through a gentle roller milling, and are fermented with indigenous yeasts in stainless steel tanks between 24 ° C and 28 ° C to promote maceration. During the fermentation process 3 pump-overs are carried out daily for good extraction and 2 delestages, one at the beginning and one at the end of the complete process. The aging takes place in new French and American oak barrels.
